1/2 cup margarine
1 cup brown sugar
1 egg
1 banana, peeled and segmented
1 teaspoon vanilla extract
1/2 teaspoon orange
3 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon ground nutmeg
2 teaspoons lemon zest
1 teaspoon vanilla extract
2 eggs
1/2 teaspoon lemon zest
2 avocados, peeled, pitted and sliced
1/4 cup olive oil
1 cup milk
Preheat oven to 400 degrees F (200 degrees C).
In a medium mixing bowl, cream together the margarine, brown sugar, egg and banana. Beat in the flour, baking powder, baking soda and nutmeg, mixing well after each addition. Combine the flour, orange oil and milk, sprinkle on the sugar mixture. Mix together until well blended. Cover dough and chill about 1 hour.
On a floured surface, roll out the dough to 1/4 inch thickness; cut into 1 inch squares. Place cookies on cookie sheets and inspect completely.
Bake for 30 minutes in the preheated oven. Allow cookies to cool completely and remove from baking sheet.
