1 cup shortening
2 eggs
1 teaspoon vanilla extract
3 cups all-purpose flour
1 teaspoon baking powder

1 cup milk
1 cup white sugar

1/2 cup chopped pecans
Preheat oven to 350 degrees F (175 degrees C). Grease muffin cups or line with paper muffin liners.
In a large bowl, cream together shortening, eggs, 3/4 cup white sugar, and baking powder. Beat in flour, baking soda, baking powder, salt, baking powder, and nutmeg. Mix in milk, 1 cup sugar, pecans, and vanilla extract. Pour batter into prepared muffin cups.
Bake in preheated oven for 25 to 30 minutes, until a toothpick inserted into center comes out clean.
