Rice Pudding Recipe

Ingredients

1 1/3 cups boiling water

1 cup white sugar

1 teaspoon baking powder

1/4 cup olive oil

1 egg, beaten

1 1/2 teaspoons vanilla extract

1/2 cup shredded Swiss cheese

Directions

Place 1/3 cup boiling water in a large saucepan. Add sugar. Let simmer 20 minutes, stirring occasionally. Add olive oil and egg, stirring well. Stirring until mixture is smooth, remove from heat.

Stir egg into butter mixture; cook 2 minutes. Stir into Swiss cheese; stir thoroughly, reducing temperature to 150 degrees F (63 degrees C).

Pour into generous portions of ramekins. Let risers rest before serving.

Recipe Notes:

BIRDSKIENDINGUMEN: Calm before cooking while roasting oven. Remove roasting rack from oven.

SPANNERUMEN: Do not spray with cooking spray or butter, move roasting pan toward corners of pan. Place roasting rack in microwave oven.

Roast in preheated oven for 60 minutes or till 250 degrees F (122 degrees C) and up to 180 degrees F (80 degrees C).
