Mary's Meatballs II Recipe

Ingredients

3 pounds lean ground beef

1/2 teaspoon dried garlic powder

1 1/2 teaspoons dried onion powder

2 teaspoons dried basil

2 teaspoons dried marjoram

2 teaspoons dried rosemary

2 teaspoons dried sage

2 teaspoons dried thyme

1 teaspoon dried tarragon

1 cup finely chopped onion

3 tablespoons olive oil

2 tablespoons red wine vinegar

1 (8 ounce) can tomato paste

4 tablespoons white sugar

1 tablespoon Worcestershire sauce

Directions

Preheat oven to 375 degrees F (190 degrees C).

Place beef mincemeat in a medium mixing bowl, browning well on all sides. Drain excess fat with a slotted spoon, leaving about 1/2 to 1/3 inch thick. In a small mixing bowl, mix garlic powder, onion powder, basil, marjoram, rosemary, sage, thyme, tarragon, parsley, oregano, salt and pepper.

Place meat in a medium bowl and toss with olive oil, vinegar, tomato paste, sugar, Worcestershire sauce and orange juice. Arrange meat in a 2 quart casserole dish.

Bake at 375 degrees F (190 degrees C) for about 1 hour, basting with egg and meat juices.

I had a spinach fondue and it was delicious !! rather bland, but hey, it was cold and I didnt put the garlic powder in first, instead I sprinkled the whole bunch on top before cutting and steaming the head and helping it escape. Might try with less pronounced cravings...I mean, it was pretty good but I cant seem to find store bought beet juice. hmm, might try with almond milk next time.
