1/2 cup margarine, softened
1/2 cup white sugar
1 1/2 cups fruit juice
1 1/2 cups chopped peaches
1 teaspoon vanilla extract
Preheat the oven to 400 degrees F (200 degrees C). Lightly grease cookie sheets.
In a large bowl, cream together the margarine, sugar and fruit juice. Mix in the peach mixture and vanilla. Drop by rounded spoonfuls onto the cookie sheets.
Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.
