1 (3 pound) whole boneless pork roast
1 teaspoon ground black pepper
1/2 teaspoon dried oregano
1/4 teaspoon dried basil
1 teaspoon dried sage
3/8 cup olive oil
4 1/2 cups water
1/4 cup red wine
2 cloves garlic, crushed
1 tablespoon dried oregano
2 teaspoons white sugar
2 teaspoons salt
1 teaspoon dried oregano
Place pork roast in bottom of slow cooker. In a small bowl, mix granulated sugar and salt. Transfer pork to the pot.
Heat olive oil and pour over all. Reduce pressure, but do not break meat. Raise temperature to high. Stir in water, wine, garlic, oregano, sugar, salt and oregano. Cover and simmer 60 minutes, turning occasionally. Stir occasionally with lid off. Serve with rice.
