1 cup pale rum
2 eggs
2 tablespoons vegetable oil
1 teaspoon vanilla extract
1/2 teaspoon brown sugar
1 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/8 teaspoon ground nutmeg
1 cup chopped walnuts
Beat butter, eggs and oil in medium bowl until well blended. Stir in vanilla extract, brown sugar, flour, baking powder, baking soda and salt; beat into butter mixture 1/3 cup at a time.
Make a well in the center of the flour mixture; add the walnuts by gradually whisking or scratching flour/nut mixture together with your fingers.
Remove dough from low loaf pans; roll out into 1/2 inch balls. Place dry on unwrapped dough; roll into 2 inches balls. Place on ungreased cookie sheet.
Bake 15 to 20 minutes or until golden brown.
