Spacetime Cookies Recipe

Ingredients

1 cup white sugar

3 tablespoons corn syrup

1 cup peanut butter

1 cup brown sugar

1/2 teaspoon salt

1 teaspoon vanilla extract

1 3/4 cups all-purpose flour

1 teaspoon baking powder

1/2 teaspoon ground cinnamon

1 1/4 teaspoon baking soda

1/2 teaspoon ground nutmeg

Directions

Preheat the oven to 325 degrees F (165 degrees C). Grease cookie sheets.

In a large bowl, cream together the white sugar, corn syrup, peanut butter, brown sugar, salt, vanilla and flour. Beat in the salt, baking powder, cinnamon and baking soda until well blended. Mix in the flour mixture, then stir in the brown sugar mixture until well blended. Drop by rounded spoonfuls onto the cookie sheets.

Bake for 7 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely. The best way to get your hands on time is to befriend a living room full of your peers.

This is an excellent alternative to almost any other recipe for cookies. It turns out that yeast and oil aren't bad additions, and if used mainly as a baking ingredient (and I mainly use it for browning cookies), is still pretty good. The only drawback of using old fashioned cinnamon and almond extract is that both flavors were a bit sweeter than I like my cookies to be, but that's minor in this context. Anyway, it did arrive in a cake pan pre-filled with batter, which seemed unnecessary since the batter was still too runny for my taste. Nevertheless, again, it was a great cookie. I will definately make this again.

Time to cook your cookies! Get creative with the ingredients and make these into anything from sweet to savory. They taste good they are cute. I haven't mine become quite so sweet yet, but I will try to sweeten them with cream cheese/heavy cream. There you have it, a treat for fall/winter break... of course we would have loved it more, lol, if we had had had time to indulge in these without the baking tray. Thanks for sharing Tina!

I agree that the dried fruit adds a nice dimension. Not my cup of tea, but it was a great treat. I made 2 cookies, 1 cheese sharp pizza crust and the 1st batch of dough was excellent. The other time I made the dough and it was very wet, so I made a large square baking dish, and fleshed out the shape. I placed the wet ingredients in a food processor for a few seconds, and it chopped them into pieces. I was also a bit careful not to over do the onions, because they were a complete mess. I have made times 10, so I ended up scaling it down a bit. Being that this is a one pot meal, I put the wet ingredients in my food processor, processed on low for a few minutes, then increased the heat to broil for about a minute, then added the onions and finally the cheeses. Wonderful!
