Smoked Salmon with Black Peppercorn

Ingredients

5 tablespoons olive oil

1 cup white wine

2 pounds smoked salmon, cut into small pieces

1 medium white onion, thinly sliced

1 tablespoon minced fresh parsley

salt and pepper to taste

1/4 cup olive oil

1/2 teaspoon ground black peppercorn

Directions

Heat the olive oil in a large skillet over medium heat.

In a small mixing bowl, mix together the wine, salmon and onion.

Place the salmon on the side of a glass serving platter and brush top and bottom with the olive oil.

Heat the white wine in a medium saucepan over medium heat. Saute the onion slices in the olive oil until soft and translucent. Season with salt and pepper. Pour the white wine mixture over salmon.

Cover the pan and simmer over medium heat for 20 minutes, adding more white wine if necessary. Serve at room temperature.
