3 tablespoons brown sugar
1 egg
1 cup cornflour
1 1/3 cups milk
1 tablespoon lemon juice
1/2 teaspoon lemon rind
1 1/2 teaspoons lemon zest
Melt brown sugar in the microwave or in a large saucepan over medium heat. In a mixing bowl, mix egg and cornflour. Stir fry until mixture is thick, stirring constantly. Gradually add milk while stirring constantly. Bring mixture to a gentle simmer. Stir in lemon juice and lemon rind, to the mixture. Cool slightly.
Stir the lemon zest into the egg mixture, then stir into the mixture. Pour into a 8x8 inch pan, touching each surface, in a single layer. Steam for 2 to 5 minutes.
