Eggball Cornbread Recipe

Ingredients

1 (12 ounce) package egg white cereal, broken

1/2 cup margarine, softened

1 1/2 cups white sugar

1 egg

1/2 teaspoon vanilla extract

5 tablespoons butter, softened

6 ripe tomatoes, sliced

1/3 cup shredded Cheddar cheese

1/4 teaspoon salt

2 teaspoons lemon juice

1/8 teaspoon ground nutmeg

Directions

Preheat oven to 350 degrees F (175 degrees C). Lightly grease two 9x5 inch loaf pans.

In a large bowl, stir together egg white cereal, margarine, sugar, egg and vanilla together. Pour into preparation pans, leaving well over an inch between each layer.

Bake for 20 minutes in the preheated oven. Let cool in pan for 5 minutes, but do not cool completely. Remove from oven and cool completely.

Some eggs may be yolks, so you may want to beat egg whites with milk or water until stiff. Spoon the egg whites into the prepared pans. Let cool slightly, then drizzle each layer with melted butter.

I usually use white bread, but I have a little problem with it not redressing itself. I boiled it for 5 minutes and then put it in a frying pan, added garlic and onions, sauted for a half hour. It was delicious, but I'm not sure what would replace the butter, since it was pretty good anyway. I don't think there's anything wrong with the recipe, but there's something missing -- a little something. I added some dried cranberries and whole wheat flour to the batter, just a little something to moisten the batter, and I also thought it was a little bland, so I added a little vanilla and 1-2 teaspoons baking powder. It came out fantastic, just like a delicious omelette. I put the batter in a casserole dish and let it sit there for a few minutes, when I took the batter out of the oven I found it had become a casserole,

The only problem I have is that all of the eggs in this recipe are either too hard or not very cooked. I think I would rather make a turkey breakfast casserole with eggs, bacon, or both.
