1 (18 ounce) can sweetened coconut milk
1 (3 ounce) package instant vanilla pudding mix
1 cup water
1/4 cup vegetable oil
1 teaspoon instant coffee granules
Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 10 inch square pan.
In a large bowl, cream together the coconut milk, vanilla pudding mix, and water. Beat in oil, then stir in the instant coffee. Pour batter into prepared pan.
Bake in the preheated oven for 50 to 60 minutes, or until a toothpick inserted into the center of the cake comes out clean.
