Quick Spinach Scrambled Eggs Recipe

Ingredients

1 (8 ounce) package egg whites

1 (8 ounce) package cream cheese, softened

6 eggs

1 cup boiling water

2 cups frozen spinach, thawed

2 veggie scones

Directions

Preheat oven to 375 degrees F (190 degrees C).

Stir egg whites into cream cheese, whisking until completely coated. Spread into a lightly greased 9x13-inch pan. Top with the cream cheese. Place spinach in a shallow dish (about 1 inch deep) and pour boiling water over spinach to cover. Feed spinach continuously with egg whites, stirring a few times. Shape spinach into a large egg white and place on top of cream cheese mixture.

Place veggie scones on top of spinach as well. Dust with egg whites. Bake graciously.

Bake in preheated oven for 10 to 13 minutes, stirring occasionally. Preheat to 350 degrees F (175 degrees C). Beat egg whites vigorously throughout. Remove from oven and sprinkle with scones, if desired, for even browning.
