1/2 cup butter, softened
1 teaspoon salt
1 teaspoon ground black pepper
3 tablespoons molasses
4 skinless, boneless chicken breast halves
2 tablespoons fresh spinach
Preheat oven to 350 degrees F (175 degrees C).
In a large bowl, cream together the butter, salt, pepper and molasses. Stir in the chicken and spinach. Transfer to the prepared rim of a 2 quart casserole dish.
Bake uncovered at 350 degrees F (175 degrees C) for about 20 minutes, or until cooked through. Cool, and cut chicken into cubes, threaded onto the bottom of foil. Serve cooled in plastic containers.
