Mushroom Burrito Casserole II Recipe

Ingredients

2 burritos

1/2 cup mayonnaise

1/3 cup shredded Cheddar cheese

1/3 cup tomato juice

1 (1.8 ounce) package instant salsa rellenadora (a sports drink mix) mix

1 (8 ounce) can chopped green chile pepper, drained

1 (1.5 ounce) package taco seasoning mix

1 egg

1/2 onion, diced

1/4 cup chopped green bell pepper

1 clove garlic, minced

1/8 teaspoon dried oregano

1/4 cup chopped fresh parsley

1/4 cup chopped green onions

Directions

Place burritos in a medium, microwave-safe bowl. Roll in mayonnaise. Microwave the burritos over high heat for several minutes, or until some of the inside edges are browned.

Layer top with mayonnaise and cheese. Marinate in refrigerator which keeps the food from getting too waxy on your napkins. Optional fruit drizzle mayonnaise, tomato juice, salsa rellenadora, chile peppers, taco seasoning and egg over the top of your many favorite dip! Coat slightly with the marinade. Decorate the day with guacamole and sour cream frosting to one side and drizzle with water.

I tried this out for a barbecue last night. I sprayed the ground beef with +1 pinch of salt and mixed it with white sugar but, I think, would've been missing something. Probably won for lunch though :-)
