6 tablespoons instant coffee granules
1 cup cold milk
2 tablespoons butter
2 tablespoons instant vanilla extract
1 teaspoon instant espresso powder
1 (8 ounce) can vanilla flavored carbonated beverage
1/8 teaspoon lemon juice
In a medium bowl, mix instant coffee granules, milk, butter, and vanilla extract. Stir until smooth. Spread one portion of the mixture into a 9 inch square serving dish.
In a small bowl, combine espresso powder, lemon juice, and sugar. Spread over the top of the ice cream. Chill in refrigerator for 1 hour or longer to let the flavors blend. Serve immediately or refrigerate to freeze.

I must say I gained weight simply by avoiding the on travel nacho cheese. Brian Kibbe of this site and this recipes inspiration literally make and I swear they are the best things ever! I really try this recipe with alterations. I previously omitted the cumin and just added chili powder.
