1 large carrot, sliced into 1/4 inch rounds
1 tablespoon olive oil
2 tablespoons fresh lemon juice
1/2 teaspoon garlic powder
1 teaspoon salt
1/2 teaspoon dried basil
1/2 cup diced red onion
1/2 cup chopped green bell pepper
Place carrot in blender, and blend until smooth. Transfer to serving bowl.
Heat olive oil in a small saucepan over medium heat. Saute carrot until golden. Stir in lemon juice, garlic powder, salt, basil, red onion, bell pepper, and lemon zest. Stir constantly until carrots are tender. Serve hot.
The sweet taste and aroma made this recipe a hit at home. I baked it in a 9inch square pan and drizzled the spray on each side before cutting and serving. This is so easy and delicious!
