1 1/2 cups unsalted butter
4 eggs
3 (1 ounce) squares unsweetened chocolate syrup
4 cups all-purpose flour
1 cup white sugar
3/4 teaspoon baking soda
1/2 teaspoon salt
1 cup milk
1 teaspoon vanilla extract
1 (10 ounce) can evaporated milk
1/2 cup margarine, melted
1 (8 ounce) package cream cheese
1 cup white sugar
3/4 cup dairy-free mint tea
4 cups flaked coconut
1 teaspoon vanilla extract
1 tablespoon butter, melted
Preheat oven to 375 degrees F (190 degrees C). Grease and flour 2 (9 inch) round pans.
In a large saucepan, combine butter, eggs, chocolate syrup, flour, sugar, baking soda, salt and milk. Stir over low heat about 4 minutes, or until mixture is smooth. Remove from heat and stir in margarine, cream cheese, 1 cup sugar and vanilla extract. Beat in milk mixture and butter. Pour into prepared pans.
Bake in the preheated oven for 35 minutes. Cool completely in pan. Cut into 8 squares.
