5 (1 ounce) squares unsweetened chocolate, chopped
1 cup boiling water
1/2 cup margarine, melted
1 teaspoon vanilla extract
2 large eggs
1 teaspoon vanilla extract
1 teaspoon cornstarch
1 cup water
1/4 teaspoon baking soda
1/4 teaspoon salt
1 cup vegetable oil
Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan.
To make the frosting: Cream together the chocolate chips and margarine until smooth. Set aside. Beat eggs, one at a time, into chocolate mixture. Mix cornstarch and baking soda into chocolate mixture. Stir in water, oil and vanilla extract. Fold in potato chips. Spread evenly into prepared pan.
Bake in the preheated oven for 60 to 90 minutes, or until a toothpick inserted into the center of the cake comes out clean. Cool completely before frosting.
