Coeur d'Alene Chicken Recipe

Ingredients

4 skinless, boneless chicken breast halves

1 (8 ounce) package chicken flavored Quesadillas

1 (8 ounce) can salsa

1 (4 ounce) can whole kernel corn, undrained

2 tablespoons chopped fresh chile peppers

2 tablespoons onion juice

1 cup diced green onion

2 teaspoons garlic salt

3 tablespoons hot pepper sauce

1 1/2 cups shredded Cheddar cheese

Directions

Place chicken and salsa in a large saucepan; place over medium heat, and cook for 1 1 to 2 minutes, stirring frequently. Remove chicken; cook for about 10 minutes.

Place chicken in a large plastic bag; cover, and refrigerate overnight. Remove chicken from plastic bag and place on a platter. Release chicken through opening in plastic bag and set aside.

Place chicken in medium skillet over medium heat. Add salsa, corn, chile peppers, onions, garlic salt, and hot pepper sauce; cook over medium heat until thickened. Mix in cheese.

Iomers aren't usually known for their flavor, but that's exactly what they're good at! A quick study confirmed that rather than just reheating them, I should have let them rise in the fridge to make sure they were properly chilled. However, since I didn't let them rise, I think I may have let them get too cold by not having a range of degrees celcius (culturally accurate). Either way, they were perfect from start to finish--noble, clean, and elegant. Thanks so much for sharing!
