I have to admit, I'm not a fan of macaroni and cheese. It's too heavy for me to handle (with a little help from my hands, I think you can imagine). But you know what? I'm gonna cut out some meat and vegetables from my dinner to make this into some sort of sandwich. So let's make a sandwich!
3 tablespoons olive oil
1 (8 ounce) can minced onion
3 tablespoons minced garlic
1 (16 ounce) package shredded mozzarella cheese
1 tablespoon prepared Italian-style mustard
In a large skillet over medium-high heat, heat the olive oil. Saute the onion and garlic for about half an hour, stirring occasionally.
Stir in the cheese and mustard. Stirring constantly, fry for about 5 minutes.
Heat another tablespoon of olive oil in the same skillet over medium heat. Fry the green beans for about 5 minutes, stirring occasionally.
