2 tablespoons butter
1/4 cup yellow cornmeal
1/2 cup whole wheat flour
4 tablespoons baking powder
1 tablespoon baking soda
1 pound red onions, sliced
3 bananas, sliced
1 ounce crushed tomatoes
Preheat oven to 350 degrees F (175 degrees C).
In a small mixing bowl, cream together the butter, cornmeal, wheat flour and baking powder until smooth. Stir in the baking soda. Mix in the onions, bananas and tomatoes.
Spread the mixture into the bottom of an 8x8 inch baking dish. Bake in the preheated oven 25 minutes, or until browned.
Very good and spicy recipe. My cousin pointed this out to me after I made it. I made steamed Brie (with the Chilli powder) instead of slices. I also added garlic. I used olive oil instead of vegetable oil. I baked it in a 9inch square pan and sprinkled crushed walnuts on the inside before cutting and breakfasting it. Yum!
