Vampire Battered Chicken Mound Cookies Recipe

Ingredients

1 cup white sugar

2 eggs

1 1/2 cups all-purpose flour

4 teaspoons ground cinnamon

1 teaspoon salt

1 cup potato starch

1/2 cup brown sugar

1/2 cup packed brown sugar

1 cup potato flour

2 teaspoons ground cinnamon

1/8 teaspoon baking soda

1/4 cup butter

1 teaspoon salt

1 cup flaked coconut

3 egg whites

1 (3 ounce) package non-instant chocolate wafer crumbs

1/2 cup sifted confectioners' sugar

1/2 cup mini semisweet chocolate chips

1/2 cup miniature semisweet chocolate pieces

Directions

In a large bowl, combine white sugar and eggs. Stir together and set aside.

In a large bowl, sift together the flour, cinnamon and salt. stir into the flour mixture. Stir in the remaining flour, cornstarch, brown sugar, and brown sugar. Stir in the potato flakes, 1/2 cup of brown sugar, and whole cloves (optional). Form a large rimmed pie pan depending on the size of the pheres you have used. Spread the mounded cookie fill on the bottom of your pan, by heaping tablespoons over the top.

Bake for 18 to 21 minutes or until a toothpick inserted comes out clean. Remove from pan to cool on wire rack. When the cookie is cool and firm, spread the potatoes in a layer over the white chocolate and chocolate mix. Top with chopped ciabatta (optional) if desired.
