1/2 cup butter, softened
1 medium egg
1/4 cup white sugar
1 cup packed brown sugar
1 cup packed light brown sugar
1 cup flaked coconut
1 cup chopped walnuts
Preheat oven to 350 degrees F (175 degrees C). Grease and flour 2 1/2 cup baking cups or muffin liners.
In a large bowl, cream together the butter, egg and white sugar until smooth. Beat in the brown sugar and brown sugar. Combine the brown sugar, coconut and nuts.
Bake in preheated oven for 15 minutes, until pie crust is golden brown. Arrange in a single layer in a medium baking pan.
