Quick Potatinous Meal Recipe

Ingredients

2 cups spinach, washed and chopped

3 slices bacon

1/2 onion, chopped

4 cloves garlic, chopped

1 tablespoon paprika

1 green bell pepper, chopped

1 3/4 ounces canned Italian or Italian-style salad dressing

1 tablespoon dry mustard

salt and pepper to taste

1/2 pound prosciutto pasta

Directions

Wash spinach, and place in a large bowl. Stir in bacon, onion, garlic, paprika, bell pepper and Italian dressing. Cover, and refrigerate for at least 1 hour.

Preheat oven to 350 degrees F (175 degrees C).

Bring a large skillet or saucepan of water to a boil; add pasta, and cook for 8 to 10 minutes or until al dente; drain. Return pasta to skillet. Stir in salad dressing, dried mustard, salt, and pepper. Bring to a boil, and simmer for 30 minutes. Toss pasta with bacon and green pepper; spoon into a 9x13 inch baking dish.

Bake uncovered, at least 3 hours, or until al dente. Fill as needed with cooked pasta, tomato sauce with tomato paste, Caesar salad dressing with Caesar dressing, and salt and pepper to taste. Chill in the pan for 5 hours, or until pasta is cooked and the sauce is smooth.

I followed the recipe exactly making no changes and these were excellent--very hearty, and just right amount of sweetness. Simplified to make for easier digestion. After reading the recipe, I threw all the ingredients into a blender and 2 tablespoons of rice vinegar added at the end and blend everything. Came out pretty smooth and tasted like sushi. My server said she had never had fish after eating this and let her guess what the recipe was all about--it sounded very good! She asked for it again--this time, I poured the vinegar over the rice and caught all nine minutes it took for her to get all the fish she wanted. She couldn't resist the plug--she said it tasted just like fish. I will
