Easy Pepperoncini Recipe

Ingredients

4 ounces pepperoncini pasta

2 (8 ounce) packages cream cheese, softened

1/2 cup grated Parmesan cheese

1 (16 ounce) package frozen mixed vegetables, thawed

2 clove garlic, minced

1 (8 ounce) can tomato paste with green chile peppers

1 large tomato, diced

2 cups mushrooms, sliced

1 (4 ounce) package shredded mozzarella cheese

1 (8 ounce) can sliced mushrooms, drained

1 (8 ounce) jar marinated pizza sauce

1 (16 ounce) package shredded mozzarella cheese

1 cup chopped fresh parsley

Directions

Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.

In a large bowl, mix cream cheese, cheese, pepperoni, mixed vegetables and garlic. Mix thoroughly and pour over pasta. Sprinkle with tomato paste, mushrooms, cheese, pepperoni mixture and tomato mixture. Sprinkle with mushrooms. Lastly, sprinkle with mozzarella cheese. Cover and refrigerate for at least 3 hours before serving.
