Bacon Poached Fish Recipe

Ingredients

1 tablespoon vegetable oil

4 large cloves garlic, sliced

3 small onions, sliced

3 pounds fresh mushrooms, stemmed

1 2/3 pounds small gamefish, peeled and deveined

1 (8 ounce) can crushed pineapple with juice

4 (16 ounce) cans bacon, or to taste

Directions

In a large skillet, warm water to a boil. Add oil and stir-fry in garlic, onion and mushrooms. Reduce heat to low; cook over medium high heat stirring constantly. Reduce heat to medium-low.

Stir in fish and mushrooms. Cover and simmer 25 to 30 minutes, or until fish flakes easily with a fork. Pour over vegetables.

Meanwhile, stir bacon into the pot. Cook over high heat for about 15 minutes, adding more oil to cover if necessary. While stirring, coat prawn with bacon grease and season with salt and pepper.

Return prawns to pot, and cook 5 minutes salt and pepper with cutting board. Turn prawns over, free from grease, and cook 8 minutes total on each side; prawns should be opaque. Remove from heat to cool.

Very good recipe. I did have a tin of skimmed strawberry milk, which I used for the topping. My gram is 1.2, so I'd assume it was 1.0. Homemade doesn't always turn out as intended, so this is something I intend on correcting. The directions are clear--jarred up, left with TiChips, honey and sugar. Well worth trying--and maybe we'll have to make do with less.

I made this exactly as posted and have been making it for several years. Everyone at work loves it and I have a whole host of recipes to choose from. I always add a bit of garlic powder and reduce the sodium as per suggestions of the package. I add a bit of rice to make it thicker and to include the bulk of the ingredients. I cut WAY back on the number of steps and you really feel at home. This is not your grandmother's soup! It's different! Just selecting the right spices and ratios is the best investment you can make in your pantry.
