1 pound strawberries and plums
1 quart olive oil
1 onion, halved
3 cloves garlic, minced
1 (16 ounce) can chopped celery
1 (14.5 ounce) can whole peeled tomatoes, with juice
1 cup sliced almonds
1 cup baby carrots
1 cup chopped zucchini
1 (16 ounce) can frozen mixed vegetables
1 cup fresh broccoli florets
1 (16 ounce) can sliced mushrooms
1 (16 ounce) package frozen mixed berries
1/2 cup olive oil for frying
In a mixing bowl, mix strawberries and plums, olive oil, onion, garlic and celery. Spread mixture over sandwich, and sprinkle with tomatoes, almonds, carrots, zucchini, mixed vegetables and broccoli. Heat oil in a large skillet over medium heat. Fry sandwich in oil until golden brown and crisp, about 10 minutes. Drain on paper towels and serve hot.
Good flavor. I used the extra sauce over potatoes also.
