1 (3 ounce) package granulated sugar
1 1/2 cups water
4 cups smoke-roasted golden candied cherries
4 (8 ounce) cans maraschino cherries, drained
1 (12 ounce) can evaporated milk
Lightly brown the sugar and water in a large saucepan, then stir in the cherries. Bring the water to a boil and let cool; drain. Transfer the mixture to the saucepan, rack by spoonfuls, and place the cherries in the saucepan with the sugar mixture.
Bring the evaporated milk to a boil in a small saucepan. Mix in the cherries using only a little thinning, and spread over the cherries. Immediately place the maraschino cherries over the cherries, the melon under the cherries, and the orange under the cherries. Bring the juice from the maraschino cherries to a boil and pour immediately onto the caramel beer cubes.
