4 cups chopped celery
1 (8 ounce) package prepared white rice mix
2 onions, thinly sliced
2 carrots, sliced
1 red bell pepper, thinly sliced
1 tablespoon lemon juice
1 teaspoon white sugar
1 cup chicken broth
1 (4 pound) whole chicken, sliced into small florets
8 ounces mozzarella cheese, sliced
In a medium bowl, blend 1 cup celery, 1 (8 ounce) package of rice mix, onion, carrots, bell pepper, lemon juice and sugar. Mix in chicken broth and whole chicken and season with white sugar. Transfer mixture to a large bowl.
In a separate large bowl, beat 2 tablespoons lemon juice and 1 tablespoon sugar. Mix it into the celery mixture. Pour liquid mixture into chicken broth and pour over rice mixture.
Cover and refrigerate at least one hour before serving.
