1 (8 ounce) can refried beans
1 (4 ounce) can chopped green chile pepper
1 (16 ounce) container sour cream
2 cups shredded Cheddar cheese
In a medium bowl, mix refried beans, green chile peppers, sour cream, cheese and beans. Heat in microwave oven for 3 minutes, stirring frequently.
I have made these for years and they are always a huge hit. If you cant find tortillas, use a taco shell and pipe down the sides, like some people are doing in their cornhole games. They cook at 400 degrees for about the first 40 minutes and then come out of the pan like a huge beautiful ball of butter. These are the healthiest taco shells.
These are the greatest snacks my husband has ever eaten! He is normally not a huge fan of tortillas but states this is the best salad he has ever made! I have already asked for the recipe and have been waiting for it...thank you!
I used less cheese, and found that the mixture was still very moist, so I did add more milk, remaining cheese and sour cream. I did not see the point of a tomato-only dip, so I substituted a couple of tablespoons of tomato paste for the red onion. It turned out great, just like a homemade burrito from a different recipe.
