Caramel Corn Muffins Recipe

Ingredients

1 egg, beaten

1 1/2 cups milk

1 cup butter, room temperature

8 tablespoons all-purpose flour

2 teaspoons baking powder

1 teaspoon baking soda

1/4 teaspoon salt

2 eggs

Directions

Preheat oven to 350 degrees F (175 degrees C). Lightly grease two 4 3-inch muffin cups.

In a large bowl, mix together egg, milk, butter, flour, baking powder, baking soda and salt. Stir egg mixture into flour mixture with hands until moist. Fold in base and crust. Spoon mixture into prepared muffin cups.

Bake in preheated oven for 20 minutes. Remove muffins from preheated oven and cool on a wire rack.

While muffins are cool, prepare cherry pies according to package directions. Preheat oven to 350 degrees F (175 degrees C).

I used white fondant while others might have used dark or dark brown. Any browned fondant should be safe to use. Particularly care should be taken when working with egg yolks, as well as the precision with which to work. Lots of people over-cook the point where the yolks inject excess lactic acid where it shouldn't be. The salt reduces the mouth feel, but isn't required. Ta-da! I continued to use the same recipe elements without redoding a single thing. This is a great recipe and easily adaptable to most homespun recipes. My family really liked it--my Santa even provided an oven ready version! And did their research beforehand, too! Loved it and will make it again!
