3 tablespoons olive oil
1 medium onion, chopped
1/2 teaspoon salt
2 teaspoons paprika
1 dash garlic powder
1/2 teaspoon dried oregano
1 tablespoon dried basil
1 tablespoon dried rosemary
1/2 teaspoon dried thyme
2 cloves garlic, crushed
6 black olives, pitted and sliced
1/2 pound smoked chicken breast meat, cut into 1/2 inch cubes
1 (8 ounce) package shredded mozzarella cheese
Heat olive oil in a large skillet over medium heat; saute onion and salt in olive oil until onions are translucent. Add mixture to skillet; add garlic powder, paprika, oregano, basil, rosemary, thyme, garlic, olives, chicken and spread evenly. Reduce heat and simmer, covered, for 30 minutes.
Stir cheese in, and cook an additional 5 minutes to blend flavors. Remove skillet from heat. Cover and let cheese melt about 1 minute. Drain and stir in mozzarella cheese. Serve at room temperature.
I traded the lemon for the orange and Dash Kilham for the jam. I remember talking about this cake with my sister.. She said it tasted just like the jam she had from a chocolate shop. Ahh the memories...
