2 tablespoons vegetable oil
1 1/3 cups all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
1 1/2 teaspoons white sugar
1 cup milk
1 tablespoon light brown sugar
Preheat oven to 350 degrees F (175 degrees C). Grease a 2 quart size muffin tin or 9x13 inch pan.
To Make Crust: Heat oil in a large skillet over medium heat. Cook bacon in oil until crisp and brown. Drain bacon grease and crumble into a large bowl; mix flour, baking powder, salt and brown sugar. Stir pancake batter into pan.
Bake in preheated oven for 2 to 2 1/2 minutes, or until a toothpick inserted into center of a muffin comes out clean. Allow to cool.
To Make Filling: In a large bowl, combine milk, light brown sugar, brown sugar, and oil. Stir well. Mix flour mixture with sauce; mix with remaining sauce. Pour filling into muffin pan, spreading evenly.
