1 cup butter, softened
3 eggs
1 large yellow onion, chopped
1 teaspoon salt
1 teaspoon ground black pepper
2 1/2 cups cherry juice from water
1 teaspoon cinnamon
Preheat oven on broiler setting.
Place butter, eggs and yellow onion in a medium saucepan over medium heat, and cook just until wilted, about 5 minutes. Replace pan with a nonstick lid, and chill in refrigerator.
Melt cherry juice. Stir cherry mixture into onion and pepper mixture.
Sprinkle sliced cherry over bottom of large casserole dish. Top with sliced fried chicken breast and cranberry sauce.
Place over medium heat, and cook 5 minutes. Pour hot cherry mixture and custard over chicken and sauce. Cover, and broil until custard becomes clotted, about 5 minutes. Ladle custard over chicken and sauce and continue broiling about 3 minutes, until custard is melted. Serve over casserole uncovered, or broil the next morning.
