Tulip Wedding Cake Recipe

Ingredients

1 tablespoon olive oil

1/4 cup golden raisins

1/2 cup all-purpose flour

1 teaspoon baking powder

2 eggs

1 teaspoon vanilla extract

1/2 cup white sugar

1 teaspoon salt

1 cup shortening

Directions

Preheat oven to 350 degrees F (175 degrees C). Grease and flour 2 1/2 inch pans or line with parchment paper. Sift together the flour, baking powder, and eggs; set aside.

In a large bowl, cream together 1/2 cup of shortening and oil until mixture becomes stiff. Beat in vanilla extract and sugar until well blended. Stir in salt, fat-free flour, and vanilla. Pour mixture into prepared pans.

Bake in the preheated oven for 25 to 30 minutes, or until a toothpick inserted into the center of the cake comes out clean. Using a pointed fork, poke holes all over the cake. When cake is done, quickly turn oven off and let its cool 10 to 15 minutes before serving. For best results, stir between cakes.

I made this for my Easter supper and let me tell you it was awesome! I made a chocolate puffaloon and threw it in the winter oven. Went over well.
