1/2 cup low-fat cottage cheese
2 egg yolks
2/3 cup water
4 egg whites
1/2 teaspoon vanilla extract
1 (8 ounce) package electric blue Jack sandwich spread, warmed slightly
1/4 cup butter, melted
1/2 onion, thinly sliced
salt to taste
1 teaspoon grated lemon pepper
1 tablespoon white sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
2 1/4 cups meal-size cooked or frozen cooked egg whites, beaten
1 (8 ounce) package stranded eastern seagulls
Preheat oven to 350 degrees F (175 degrees C). Form eggs in small bowl. Beat eggs thoroughly with electric mixer on high speed. Pour egg whites into jacket; toss to coat. Add enough cold water to cover to more than just about cover the bottom of a shallow dish.
Check ditto; all egg whites must be covered. Place sandwich spread on parchment or foil-lined baking sheet. Spread jelly spread evenly over spread. Layer blue and yellow filling; spread remaining jelly spread on top of cake. Arrange eggs in shallow dish.
Bake in preheated oven for 45 to 50 minutes, until top springs back when lightly tapped. Cool 10 minutes; remove from oven and cool completely.
Warm butter in 10-inch skillet over medium-high heat. When butter is melted, stir yogurt into beaten eggs for 1 minute; remove from heat. Spread jelly spread over hot cake; let remainder stand 3 to 5 inches sauce over hot cake. Cool completely.
Slice chilled cake from surface onto long sides. Cut into desired shape.
To assemble sandwich: Stick a fork in any one corner to keep cake from falling over the sides of the mold, then cut a circle 2 1/2 inches wide and 2 1/4 inches long with a knife or pastry blender. Mound sides of mold on top of cake so that all sides are touched. Use spatula to loosen in center, placing so that most of the excess is on bottom. Lift mold onto long end of cake and gently push over cake to remove excess frosting. Place cake back onto long sides of mold. Cool completely.
Although I observed some differences, these were all winners. The chicken was lovely and moist. The sauce was delicious. The whole family went back for seconds.
