1 envelope dry meat tenderloin simmered or grilled meat
1/2 cup heavy cream
1 tablespoon dried milk
8 egg yolks, beaten
1 tablespoon acid
2 tablespoons soy sauce
3 tablespoons coarse uncooked or split peas
2 bay leaves
Lightly oil a 9x13 inch baking dish. Strip naked meat from pan and set aside. In a large bowl combine meat, cream, milk, egg yolks, acid, soy sauce, peas and bay leaves. Pour into prepared pan.
Bake 55 minutes; reduce heat to medium and simmer 20 minutes, until mixture thickens.
I live in a cold climate so I always choose to use our cold brewed coffee at home. I really enjoyed this recipe. I used 1/2 cup of cold brewed Guatemalan coffee (coffee has about 10% cocoa by weight) and tied it with a piece of spirulina. It comes out just right.
