2 cups rolled oats
1/2 teaspoon ground cinnamon
1 1/2 teaspoons baking soda
1/2 teaspoon salt
1/2 teaspoon ground nutmeg
1/2 cup packed brown sugar
1 (1 ounce) square unsweetened chocolate, melted
1 1/2 cups brown sugar
1 cup peanut butter
1 cup brown sugar
1 teaspoon vanilla extract
1 cup milk
2 teaspoons vanilla extract
3 tablespoons milk
1 cup chopped pecans
Preheat oven to 350 degrees F (175 degrees C). Line cookie sheets with parchment paper.
In a large bowl, mix oats, cinnamon, baking soda, salt, nutmeg and brown sugar. Stir egg and vanilla into oats mixture. Fold in peanut butter and 1 cup brown sugar; pour mixture into cookie sheets on the prepared sheets.
Bake for 8 to 10 minutes in the preheated oven. Remove from cookie sheets to cool on wire racks. Chill overnight.
