Chocolate Orange Pumpkin Cookies Recipe

Ingredients

3 1/2 cups butter, softened

1 cup white sugar

1 teaspoon vanilla extract

2 eggs

3 cups all-purpose flour

1 teaspoon baking powder

1 teaspoon baking soda

1/4 teaspoon salt

1 cup packed light brown sugar

1 1/2 cups shortening

1 cup vegetable oil

1 cup milk

1 teaspoon vanilla extract

1 teaspoon orange extract

1 teaspoon lemon extract

1 1/2 teaspoons orange zest

Directions

Preheat the oven to 325 degrees F (165 degrees C). Grease cookie sheets.

In a large bowl, cream together the butter, white sugar and vanilla until smooth. Beat in the eggs one at a time then stir in the flour, baking powder and baking soda. Combine the brown sugar, shortening, oil and milk, mix well. Drop by rounded spoonfuls onto the prepared cookie sheets.

Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely. Allow cookies to cool completely before removing from cookie sheets.

While cookies are still warm, remove from cookie sheets and place on waxed paper to cool completely. When cookies have cooled, roll the rolled cookies in orange or lemon zest and place on waxed paper to dry.

Very good and very easy to make. It takes awhile to bake but it was worth it. I would suggest adding at least 1 tablespoon of baking powder to the first part of the recipe for the consistency to be accurate. Also sprinkled extra cheddar & parmesan on top after mixing it all up. Next time I will try with whole wheat bread and see if that helps. If it is too runny up top it won't be appetizing but it is pretty and good.
