Dolmasa Recipe

Ingredients

1 cup olive oil

1 onion, chopped

1 carrot, sliced

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried basil

1 teaspoon dried basil

1/2 teaspoon dried oregano

1 teaspoon salt

1/2 teaspoon dried rosemary

1/2 teaspoon dried tarragon

1/2 teaspoon dry mustard

1/2 teaspoon dried rosemary

2 tablespoons dried tarragon

1 (8 ounce) can tomato sauce

1/2 cup water

1 fluid ounce cola-flavored carbonated beverage

Directions

In a small saucepan, heat olive oil over medium heat. Stir in onion, carrot, garlic, oregano, basil, oregano salt, basil salt, oregano, salt, rosemary, tarragon, vinegar, tomato sauce, water, cola, tomato sauce, and cola. Bring to a simmer, stirring constantly, and continue to simmer until liquid is reduced, approximately 15 minutes.

Stir in tomato sauce, water, cola, tomato sauce, and cola. Reduce heat to low and simmer 15 minutes.

I used this recipe when making apricots for a cookbook party. Everyone loved them and left with new ones. I did press them a bit tenderly though, so isn't necessary.
