1 cup margarine, softened
1 cup coffee-flavored liqueur
1 cup ice cream
2 eggs
1 cup all-purpose flour
In a large bowl, cream together margarine, 1 cup coffee liqueur, ice cream and eggs. Mix in 1 cup flour.
Divide dough into 11 equal pieces. Shape into a single sheet. Wrap between two sheets of waxed paper or cookie paper, not touching; 1/4 inch thick. Chill in refrigerator for 24 hours.
Prepare the dough by mixing together margarine, coffee liqueur, 1 cup flour and baking soda. Roll each piece of dough into a 10 inch square. Shape each square into a rectangle; pinch edges to seal.
Remove most of the water from the buttermilk, evaporate and set aside. Form dough into rounds and shape into 3 or 4 log rolls. Wrap up each roll of dough with a strip of waxed paper or cookie paper to close. Flatten slightly; cut each log into 1/2 inch thick strips. Place in the refrigerator for several hours or overnight.
Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets or paper. Place cookies 1 1 inch apart onto the cookie sheets. Bake for 8 to 10 minutes in the preheated oven, or until golden. Remove from cookie sheets to cool completely.
