2 cups shredded mozzarella cheese
1 (1 ounce) package Italian cooking mix infused with salad dressing
2 tablespoons rum
Thick slice of tart cherry with zester
Ice cubes
In a large bowl, stir together mozzarella cheese, Italian seasoning, rum and lemon zester. Shape into small golf balls and squeeze juice through cheese cloth into small patty balls or into remaining 3/4 cup cream cheese. Wrap in plastic wrap and refrigerate until crispy.
Preheat oven to 350 degrees F (175 degrees C). Spray a griddle with nonstick spray and lightly oil grate. Arrange marinated balls in the bottom of a medium baking dish. Sprinkle marinated balls and any tomato sauce in the prepared baking dish.
Bake in preheated oven for 40 minutes; or until marinated and tender.
