Bald Eggs, Pecans and Cream Recipe

Ingredients

1 teaspoon baking powder

1 teaspoon baking soda

1/2 teaspoon salt

1 1/2 cups all-purpose flour

1/2 tablespoons melted butter

1 cup chopped pecans

Directions

Preheat oven to 350 degrees F (175 degrees C). "Bake" eggs in preheated oven for 7 minutes. Remove from oven and sprinkle with baking powder.

Beat flour and 1/2 cup of margarine in small bowl on low speed of mixer until fluffy. Stir together egg whites and sugar, then fold into mixture. Pour mixture into egg shells.

Bake in preheated oven for 20 to 25 minutes, until set. Remove from oven and allow to cool. Store in refrigerator.

To make Cream of Pecan: Beat butter, pecans and chopped pecans in medium bowl until smooth.

These rolled oats have a great texture and come out great. I did press mine out a little (1/2 tsp) & i sprinkled extra sugar on the sides prior to dipping. This is a great basic recipe & good starting points. Next time, I'll double up on the sugar and try to help defray some of the cost of the ingredients. My family went back for seconds. I had read that using dry oats would give it the desired chew, but this was really bare. Maybe cutting butter in half will help?
