1 pound baby spinach, sliced
1/2 teaspoon olive oil
1/2 teaspoon paprika
1/2 teaspoon salt
1/4 teaspoon dried oregano
2 cloves garlic, minced
1/4 teaspoon dried basil
Place spinach in a large bowl and cover with olive oil, paprika, salt and oregano. Stir thoroughly and refrigerate for several hours. Drain, and place into serving dish.
Heat olive oil in a small saucepan to just under a low heat. Stir spinach into oil until golden. Remove from heat, and allow spinach to cool. Stir spinach into spinach mixture. Serve spinach over a large egg white.
