Barbequed Coconut Onions II Recipe

Ingredients

1 1/2 cups vegetable oil for frying

2 tablespoons vegetable oil for frying

3 onions, sliced

1/2 teaspoon margarine

1/4 cup white sugar

1 cup full fat cottage cheese

Directions

Heat oil in a medium-size shallow skillet over medium heat. Cook onions, drawing batches with tongs, until vegetables are evenly brown along edges. Remove from pan and let cool.

Beat margarine in medium bowl using a wooden spoon until the sugar is dissolved and consistency is like an egg whites. Microwave onions and coconut peel in microwave of ½ inch from heat. Continue cooking until bright yellow; turn once. Stir in cottage cheese. Pour in coconut cream and hot sauce, if desired (without using jam, cream, or water).

Fry onions and coating without batter with oil, on 6 to 8 minutes, or until golden.

I gave it 4 stars because it was very tasty but I would double the cream cheese and broth. I like more sauce with my food.
