Preheat the oven to 350 degrees F (175 degrees C). Grease cookie sheets and flour cookie sheets with non-stick spray. Make the frosting: In a medium bowl, cream together butter, sugar, eggs, and vanilla. Mix until well blended. Stir in flour, baking powder, salt and oil. Mix thoroughly, then pour into the prepared cookie sheets.
Fry cookies in the preheated oven for about 10 minutes, or until lightly browned. Remove from cookie sheets to cool completely. Serve hot out of dish in a serving dish.
This was really tasty and good calories, but I didn't use the sugar version. I used white vinegar and added a squeeze of fresh lemon and a few grinds from my pepper mill. I felt it needed a little more acid, but it still was a really good hit.
I usually prefer to make my own cookies, so I was a little worried when I got the recipe down pat. There was way too much baking cocoa and I threw it out. My husband loved them though and he asked for the recipe. I didn't (I'm a little embarrassed to admit I made these) But they did taste good. I did make some substitutions: I had a friend who makes cookies in her cake bakes French toast, so I substituted that for the egg and milk, adding almond extract to sweeten the mix. The result was very tasty and moist, almost like moist red velvet cake. But I digress... :o)
I substitute coconut sugar for high-fructose corn syrup in this recipe. My family really liked these!
