Egg Casserole II Recipe

Ingredients

1/4 cup butter

2/3 cup red wine vinegar

1/4 cup lard

1/2 cup all-purpose flour

3/4 cup milk

2 eggs

1/2 cup vegetable oil

1 cup all-purpose flour

1/4 cup chopped onion

1 cup flaked coconut

1 pound sausage, torn

1 tomato, diced

Directions

Preheat oven to 325 degrees F (165 degrees C).

In a saucepan, melt butter and vinegar. Mix in the lard and flour. Set aside.

Stir the milk into the vinegar mixture. Bring the flour mixture to a slow rise, stirring constantly.

Pour in the milk mixture and tomato paste. Stir well. Place the casserole in a 9x13 inch baking dish.

Bake uncovered at 325 degrees F (165 degrees C) for 20 minutes. Sprinkle with coconut to serve.
