2 eggs
1 cup cake flour
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon baking powder
1 teaspoon vegetable oil
1 cup plain old non-fat yogurt
1 cup packed brown sugar
1 egg, beaten
2 tablespoons butter, softened
1 teaspoon vanilla extract
Preheat the oven to 350 degrees F (175 degrees C). Grease and flour a 9 inch square pan.
In a large bowl, beat eggs and 1 cup of the flour. Let stand for 10 minutes. Beat in the remaining flour and baking soda, set aside.
In a large bowl, beat eggs and brown sugar until frothy. Beat in flour mixture alternately with egg and butter. Stir in vanilla.
Pour batter into prepared pan. Bake in the preheated oven for 30 to 35 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool.
