Spicy Hominy Recipe

Ingredients

2 tablespoons olive oil

1 medium head cabbage

1 big red onion, thinly sliced

1 medium zucchini, sliced

2 medium carrots, sliced

2 medium fresh mushrooms

1 cup water

1/2 teaspoon prepared Dijon mustard

Directions

Place olive oil in a large, heavy skillet over medium heat. Stir in the cabbage and onion. Cook, stirring occasionally, until cabbage is crisp and brown. Remove from heat.

Spoon ketchup onto the bottom of a large mixing bowl and add cabernet wine from the bottle of red wine. Drizzle over the cabbage, tossing to keep them in place.

Mix the ketchup with 2 tablespoons olive oil, green onions, celery leaves and mushrooms. Pour over the cabbage mixture in a mixing bowl, adding more olive oil if necessary to keep all the vegetables nicely covered.

Pour in enough water to cover the mixture. Cover and refrigerate the mixture. Refrigerate as long as you like the taste of the sauce.

Stir the onions, celery and mushrooms into the mixture. Mix in enough water to keep sauce at a thin consistency. Garnish vegetables with parsley salt and grated Parmesan cheese.

very appetizing. I used a little garlic powder and some wine as suggested. I halved (wish I hadn't) and used two cans of stewed tomatoes. I tossed in some chicken thighs, baked in a non-stick pan at 350 for about 15 minutes and came out great.

This was a huge hit! I used Homemade Tortillas instead of Croissants, buttermilk instead of Water, and I put the eggs and sour cream (I put mine in a little casserole dish) in the freezer for a little while before fork- ing them in the bowl. They cooked like magic and were delicious! I also took the time to properly marinate the veggies (I put the veggies in a little more than a cup of water, and I let them soak) and to prep the veggies before I added the cheese and spices. I didn't have any fresh tomatoes, so I canned them and frozen them in ziplock bags. That gave me plenty of time to add the cheese and toss the veggies on the bread, and I also skipped the baking powder and added the dry ingredients along with the chicken, turkey, and bacon.
